I'm so excited to invite you into our kitchen for a peek at how we manage meal times as a family of 8. Meal planning, grocery shopping, and the endless pile of dishes often feel like their own full-time job. But over the years, Iāve also realized that the kitchen is more than just a place to cookāitās a place where we connect and teach, making sweet (and usually messy!) memories together.
One of our biggest goals as a family is to eat real, nourishing food while making mealtime something we do together! Getting the kids involved in the kitchen teaches them valuable life skills and helps them develop confidence, and we've discovered we have incredibly talented mini-chefs!
Today, Iām sharing three of our absolute favorite mealsāones that are simple, made with wholesome ingredients, and perfect for getting the whole crew involved.
š² Red curry chicken ā Our favorite cozy meal
This is hands-down our favorite go-to dinner. It's a flavorful and nutrient-packed dish that supports digestion and boosts immunity. With lean protein, anti-inflammatory spices like turmeric and ginger, and healthy fats from coconut milk, this meal nourishes everybody and is super customizable for each family member.
Here's what we love about it
Quick and easyāready in about 30 minutes
Everyone can customize their own bowl with toppings like fresh lime, cilantro, or extra spice
How kids can help
Washing and peeling carrots or bell peppers
Measuring out spices (a great way to teach fractions!)
Stirring the sauce while it simmers
Washing and cooking the rice

Ā šŖ Homemade oatmeal cream pies ā SO good!
These cookies are an absolute fav! Theyāre soft, chewy, and sandwiched with the most delicious vanilla filling. Baking together is one of our favorite ways to spend an afternoon, especially on chilly winter days when weāre all stuck inside.
What we love about It:

āļø A great way to teach kids basic baking skills (our oldest 3 boys made these independently!)

š Homemade bread ā a weekly tradition
There is nothingĀ like the smell of fresh bread baking in the oven. It instantly makes the house feel warm and cozy, and the kids love being part of the process. We make the recipe below 1-2 times per week! It's the most delicious bread ever, perfectly topped with butter and jam, and wonderful for sandwiches!
